PROCESSING OF PLANTAIN INTO FLOUR

The Old Tafo Department of Agriculture educated some selected women on how to process plantain into various foods when there is glut. Plantain when there’s glut and riped are basically fried or used for other local cuisines. Many of these fingers of plantain are left to rot without processing into other foods.

The WIAD unit of the Old Tafo Department of Agriculture took upon itself to train these women on how to process plantain into various foods. Most importantly is the plantain flour which could be used for several foods. The Department taught the women how to process plantain into flour, and how to use the flour to prepare chips. Again, the flour was used for Plantain Tombrown. The Department hopes that participants will take up this innovation and implement it when there’s glut.
